This is a really healthy and delicious dessert. I have served it many times to kids and adults and they can never tell that this mousse has avocado as a core ingredient. I suspect that most kids would refuse to eat it if they knew it includes avocado.
Recently, I have been reducing refined sugar in my diet, therefore, for this recipe I have used dates as a sweetener, which are full of fibre and antioxidant.
Ingredients
1 large avocado
4 soft Medjool dates, pitted and roughly chopped
150ml oat milk
2 tbsp cacao powder
1 tbsp vanilla extract
8-12 strawberries (depending on size), roughly chopped
Somre granola for topping
Some slivered pistachios and dried rose petals for garnishing (optional)
Method
Place the avocado, milk and the dates in a food processor and blend until smooth (add 1or 2 extra tablespoons of milk if needed)
Add the cacao powder and vanilla and blend again until completely combined. Transfer the avocado to a pipping bag, seal the bag and fringe for at least an hour or until you are ready to serve.
To assemble the glass, fist add a couple of tablespoons of granola to a small glass and then add some strawberries on top. Pipe some avocado mousse on top and garnish with some pistachio and rose petals.
