Roasted Sweet Potatoes & Garlic Mash


Serves 2-4


Sweet potatoes and garlic both have many health benefits and complement each other really well. You can serve this roasted sweet potatoes and garlic recipe as a side dish, as you might mash potatoes. I like to add a lot of garlic, but you can use one bulb of garlic if you prefer less garlic. Simple but delicious!


Ingredients


600g medium sweet potatoes, skin on

1-2 garlic bulbs

Olive oil

30g tahini

Some feta cheese and chopped parsley to garnish (optional)


Method


Preheat the oven to 170°C fan/ 375°F/ Gas 5. Line a baking tray with parchment.

Place the sweet potatoes and the garlic on the baking tray. Drizzle with a little oil and massage to coat. Place the garlic bulbs in the middle of the tray to stop them from burning.


Bake for 45-50 minutes, or until caramelised around the edges and soft inside.


Once the sweet potatoes and garlic are cooked, allow them to cool slightly (just enough to allow you to handle them) and scoop out the flesh of the sweet potatoes into a saucepan.


Peel the garlic bulbs and add to the saucepan. Turn the heat to the lowest setting and add the tahini and a pinch of salt. Mash the sweet potatoes fully and garnish with some feta cheese and parsley and serve.
